Salsa Recipe

Simple recipes are a specialty of chef Jason Hill. Here, he shares an authentic Mexican salsa recipe using 7 simple ingredients. Your friends will BEG you for this recipe!

Mexican Salsa

28 ounces canned chopped tomatoes, in juice
3 cloves garlic, peeled
Juice of 1 lime
1 handful cilantro leaves, whole
½ cup pickled jalapenos, or more
1 tablespoon kosher salt
½ medium onion
3 fresh serrano peppers, optional

Pulse all ingredients in a food processor or blender unti just chunky. Serve with tortilla chips.

Tomato Soup Recipe

This wonderful tomato soup recipe comes from the Bistro Jeanty restaurant in Yountville, California. It’s one of many fantastic restaurant recipes in Napa Valley.

You will need 2 1/2 lbs ripe/juicy tomatoes, 1/2 cup butter, 1/2 pound of onion, 6 garlic cloves, 1/4 c of tomato paste, 1 bay leaf, 1/2 Tb. pepper corns, 1 tsp. thyme, 4 cups heavy cream, 1 tbsp butter. Salt to taste, 1/2 tsp white pepper, 1 lb. puff pastry, 1 egg.

Procedure:
Melt the ½ cup butter in a large stockpot over medium-low heat. Add the onions, garlic, thyme,
bay leaf and peppercorns; cover and cook for about 5 minutes. Do not let the onions color. Add
tomato paste and lightly “toast” the tomato paste to cook out the raw flavor the add tomatoes,
and water if needed. Simmer over low heat for 30-40 minutes, until the tomatoes and onions are very soft and broken down. Puree by passing through a food mill. A food mill works best however you may use a blender in batches or a handheld immersion blender until finished, the strain. Return the soup o the pot. Add the cream, salt, white pepper and remaining butter to taste. Bring soup to a simmer then remove from heat. Allow the soup to cool for two hours or overnight – in the refrigerator.
Divide the soup among six 8-ounce soup cups or bowls. Roll out the puff pastry to 1/4 inch. Cut into 6 rounds slightly larger than your cups. Paint the dough with the egg wash and turn the circles, egg wash side down, over the tops of the cups, pulling lightly on the sides to make the
dough somewhat tight like a drum. Try not to allow the dough to touch the soup. These may be made up to 24 hours in advance and covered with plastic in the refrigerator. Preheat oven to 450 degrees. Lightly paint the top of the dough rounds with egg wash with out pushing the dough down. Bake for 10-15 minutes, until the dough is golden brown. Do not open the oven in the first several
minutes of cooking as the dough may fall. Serve immediately.

Totally 100% Raw Corn on the Cob,
Tomato Slices,
Cucumber Chunks &
Cilantro…
spritzed with Lime Juice ?

* I n g r e d i e n t s *
…missing quantities are up to you for this one!…
— Raw Corn on the Cob (yes, totally raw, NOT even so much as lightly steamed…although if you need to steam them, we won’t tell anyone…)
— Beefsteak Tomatoes
— Cucumbers*
— 1 bunch of Cilantro
— 1 Lime
*unpeeled if organic; peeled if inorganic

* P r e p a r a t i o n *
— 1) Shuck the corn, and lay out on what will be each person’s lunch or dinner plate.

— 2) Slice the beefsteak tomatoes into very large pieces & slice the cucumbers lengthwise into quarters, setting all sliced tomatoes & cucumbers along side the shucked ears of corn.

— 3) Chop the cilantro into large pieces, and divide among all of the plates as well.

— 4) Use a manual citrus juicer or a citrus hand juicer to squeeze the juice of the lime over everything on each plate, but concentrating most heavily on the cilantro and the corn.

— 5) Serve, and enjoy!

* I n s p i r a t i o n *
— I wanted to share with you a REAL raw food meal, meaning one that is more typical for a REALLY quick and simple raw food dinner. This recipe involves no machines! But I do use a knife…

— The top question type I have been getting has been about LOVE, and mainly in the sense of asking, “How do I get more love?”

— The 2nd top question type I have been getting has been all things related to CORN, yes corn…go figure! So, to ward off in advance any further “So how do you prepare your corn?” type questions, here is the answer if you haven’t figured it out already: I eat my corn 100% raw and unadulterated…not even slightly steamed! ;)

— Regarding love, we are all an infinite field and we just come out of that…but with conditionings brought upon by us by our environments. At each of our cores, we really are all innocent. Just because many of us have been programmed with ‘negative’ and/or ‘ignorant’ things, through no faults of our own, this does not make our inner, innocent selves out to be bad…

— So we REALLY need to love OURSELVES no matter what! Take some time to sit with yourself, be it via meditation, or spending more time alone…and learn to love yourself…just do it! ;-)
