Summer Cooking With a Grill

Summertime is rapidly approaching. This means it is time to begin preparing meals without heating the house whenever possible. If you haven’t considered the value of cooking on the grill in the past, perhaps now is a great time to adjust your way of thinking.

Cooking on the grill is a great way to keep the heat of cooking outside your home as well as to bring the family together for the entire cooking process. Moms read: this is a great way to get dad to help out with meal preparation. While this is said somewhat in jest, there is some truth to the fact that men are much more inclined to slave away over a hot grill than a hot stove. More importantly, most of the mess of cooking on the grill remains outside your kitchen. I don’t know about you, but that is a huge bonus for me, when it comes to cooking.

Cooking on the grill is also a great way to get the kids involved in the meal preparation and clean up process. We like to use disposable plates when grill cooking and keep the dining <I>al fresco</I>. If you are hoping for instant family unity over the picnic table you might want to think again but there isn’t anything quite like it when it comes to not worrying about spills or dropped food as you can rest fairly certain that the animals will take care of anything that gets left behind.

Even small children can help when cooking on the grill by bringing utensils to the grill, holding plates, and ’setting’ the picnic table for your dining experience. If you intend to do a good deal of cooking on the grill you may want to invest in some portable and ‘kid friendly’ containers for things such as condiments, napkins, plastic ware, and tablecloth holders. Be sure to find containers that can handle a decent gust of wind without flying off too. These may be a little heavier for your little ones to hold but they won’t be nearly as difficult to chase when blowing across the lawn.

Cooking on the grill is a great way to enjoy nature after a long day of work. Be careful that you do not reserve this as a weekend event as you will find you miss out on some of the relaxing qualities it can bring to your midweek slump. One thing that can definitely be said about grill cooking is that the selections are almost as limitless as they are when cooking on the stove. You must use your imagination for maximum effect though very few meats and vegetables are truly off limits when it comes to cooking on the grill.

In addition to cooking meats on the grill, it is important to keep in mind that you can also cook all kinds of fresh fruit and vegetables on the grill as well. You should also keep in mind the awesome side dishes that go great with grilled foods such as baked beans, potato salad, and nice cool deserts and pies.

Cooking on the grill is a great way to bring family and friends together. The next time you plan to have a get together why not make it a night of cooking on the grill? You can have the best of all worlds with no muss, no fuss clean up and great food with good friends. Cooking on the grill is certainly a great way to get the neighbors out and about. There’s nothing on earth that can quite compare to the aroma of meat, fruit, and vegetables grilling over hot charcoal. If you don’t remember and your mouth isn’t watering just reading about, it’s been far too long since your last barbecue experience.

The most important thing to remember about cooking on the grill is that it should be an experience rather than a chore. Most of us truly enjoy the thought of having a good dinner under the sun or stars (whichever applies in your case). If you haven’t tried this in a while, it’s time to dust off the grill and refresh your memory and your taste buds.

Filmmaker Roberto Rodriguez shows you how to cook an awesome Mexican dinner. “Not knowing how to cook is like not knowing how to fuck”.
For reference, the recipe for Puerco Pibil given here is:

5T whole annato seeds 2t whole cumin seeds
1T peppercorns
8 whole allspice seeds
1/2t whole cloves

Grind the above in a spice mill/coffee grinder.

2 habanero chiles, stems and seeds removed, chopped
1/2 cup orange juice
1/2 cup white vinegar
2T salt
8 cloves garlic

Combine the above with the spice mix in a blender, and puree.

Juice of 5 lemons splash tequila 5 pounds pork butt, cut into 2-inch cubes Combine all ingredients in a zip-top bag and mix well. Line a 9×13 pan with banana leaves; add the pork mixture; fold over the leaves to cover, then cover tightly with foil. Bake 4 hours at 325; serve over rice.

Buttercream recipe

The recipe:
22 tbs salted butter, softened (about 3 sticks)
2/3 c. Crisco shortening
5-7 tbs heavy cream
2 tsp clear vanilla
2 lbs powdered sugar (about 8 cups)
1-3 tbs corn syrup

Notes:
In warmer weather add only 1-2 tbs. of cream at the beginning. See what your consistency is like once the sugar is all in, you might not need anymore liquid to thin.

Frequently asked questions:
Can I use all butter?
Yes, but cut down on the amount of liquid you add, all butter buttercream is a lot softer and will melt quicker if you have hot hands (like me!)

What is Crisco?
Crisco is shortening, or hydrogenated vegetable fat. Here are some names shortening goes by in other countries-Manteca Vegetal, Trex, Copha, Cookeen

My frosting turned out too thin, what should I do?
Add more powdered sugar until it’s the consistency you want.

My frosting turned out too thick, what should I do?
Add more liquid until it’s the consistency you want.

Will this hold up in heat and humidity?
Yes, but I’ve never tried it in full sunlight.

Will this be white?
It’s more of an ivory color due to the butter.

Can I use something other than heavy cream?
Yes, you can use light cream, half and half, or whole milk. Just beware, the less fat in the liquid, the thinner the frosting will be. Watch your consistency….

Why corn syrup?
Corn syrup add some elasticity to the frosting, allowing it to bend some. It is also a thinning agent but it won’t add to the sweetness.

Can I use this to make chocolate buttercream?
Yes, add 6 oz. unsweetened chocolate that’s been melted and cooled to room temp. Add this just before adding the sugar.

Some Principles Behind Induction Cooking

It could just be that when you speak to a person and tell that you do all your cooking on an induction stove you will be asked the question what an induction stove is. A lot of people may have heard of it but probably have never cooked on one and may even not understand the principle behind it. We can put cooking stoves in to 2 major categories namely gas and electric. There used to be 3 but coal/wood these days are only use for barbecues or some other type of outdoor cooking but for day to day cooking we use either gas or electricity.

Electric stoves can be divided in 3 sub classes, they are:

. The classic and still popular stoves with coil elements
. The halogen heaters
. The induction stoves

With a halogen or coil element stove they produce the heat
that gets transferred to the pot, pan, cooker etc. etc. and then to the contents of those, with induction it the other way around. When your cooking on an induction stove the pot or pan is the one generating the heat. When you hear this for the first time it might be a bit confusing to you but it is not that hard to understand. Ones you understand the principle behind induction cooking and you get your first experience with this type of stove you will probably never want to cook on anything else again.

An electric stove with a coil or halogen works in such a way that once you turn the stove on the element (the coil or halogen) will start to heat up. It does not matter if there is a pot or pan on that element or not it will heat up either way. That heat is then, like we said before, transferred to the pot or pan and then to the food. When you take the pot or pan of the element it will remain hot until you turn it off, then it will slowly start to cool but this will take some time. You can also login on to www.apples-recipes.com. With induction cooking the element will start to produce a high frequency electromagnetic field which passes right through the pot or pan. The pot or pan must be made out of magnetic material. This electric (magnetic) current that circulates is what generates the heat. This is the big difference between induction cooking and the other two types of electric cooking.

Now that the pot or pan is heating up that same heat is transferred to the food or liquid that is inside it. The moment you take the pot or pan from the stove (element) the magnetic field that was circulating is broken and stopped and immediately the generation of heat stops as well. With a coil or halogen element you have to turn the element of to stop the heat generation, with induction cooking there is no heat as long as there is no electromagnetic field circulation. The only heat you will feel when you take the pot or pan from the stove is the heat that was transferred from the pot or pan into the surface of the stove, not the element it self because that never produced the heat.

There is one thing that you have to keep in mind when you would like to start cooking on an induction stove. You can only use steel or iron pots because the material needs to be magnetic in nature. So all your aluminum, copper or Pyrex cookware would be made obsolete once you start cooking on an induction stove.

But if you are used to cooking electric then you will find that once you cook with induction you will probably not be going back to that halogen or coil element.

So, it is safe to say, that you will need to research what items you may and may not eat when following these diets by looking through the materials you have purchased or visiting the websites sponsored by those diets. Questions to asked and get answered include knowing the difference between good carbs and bad carbs. Dietitians recommend eating complex carbs because these are full of fiber, phytochemicals, vitamins, and minerals. Other carbs are ones, usually the ones to avoid are simple carbs which contain lots of sugar! There are more things to ask about your diet as well such as the different phases or just how to live a low carb life.

So what is detoxification (detox)? To put it very simply it’s “getting the garbage (toxins) out of your body without putting any more in”. A crock pot meal may contain a meat choice and fresh veggies, but leave out the potatoes or noodles. There are many choice you will need to make when looking for low carb recipes, but overall, it will be easy to find ones that will fit your taste buds. The most important things to understand are the rules of your low carb diet or lifestyle. Knowing which carbs you can and cannot eat, is the entire battle! Detox diets are used to refer to diets, herbs, and other methods of removing environmental and dietary toxins from the body for general health.

To detoxify one must assist the body in its natural cleansing process, or accelerate it. By following a healthy diet thus enabling the body’s organs to flush out the toxins more effectively, taking exercise and particularly long saunas to sweat out the toxins then the process is greatly effective.

How to Get a Total Body Detox Easily
